Vinification and Ageing : Spontaneous fermentation in a stainless steel vinificator for 13 days using the "pump over and delestage" techniques, at a temperature of 27°C. Aged for 28 months in small oak barrels and barrique barrels in a 60/40% ratio, blending for 2 months in a stainless steel tank
